When I started out in the restaurant industry 25 years ago, I had no idea what I was doing with my life. I was newly married and had recently been laid off from my administrative office job. I didn’t know what to do next. My mother had been in the restaurant industry for 25 years and she suggested I get a restaurant job – to work with people my own age, to make great money and to have fun.
So, I started out working with the catering company who catered my wedding. I soon found out that catering was extremely hard work with very little interaction with guests, as we were catering events for 250+. I realized I wanted to be in a dining room atmosphere in order to deliver the kind of service where I could interact directly with the guests and use my personality.
I had to beg for my first full service, dining room position as a server. The GM did not want to hire me, but I was persistent. My first day on the job was a disaster. I didn’t know the lingo, the menu, or even the basics of dining room service. I had a child throwing up all over my section! I wish there had been a “How To” manual to guide me through the basics. I managed to make it through that first shift, and the humiliation of those early days put me on a mission to learn everything I could. My first GM had taken me under his wing and in three months, I became a trainer.
During my career, I have worked in 14 different restaurants, with 8 of them being openings and 2 resurrections. Having worked in every single position in the front of the house, including every management role, has brought me to one conclusion. We all need a little guidance. I have been fortunate enough to have had the best mentors in the industry, who have guided me and have taught me the true meaning of hospitality.
So I created this consulting firm to offer guidance to restaurant owners, managers and service professionals alike, so that i could help make their lives easier and offer them proven, concrete methods to find more career fulfillment while also making more money.
By creating SIMPLY SERVING 101, I can help those of you who are interested in becoming a server or bartender. Embarking into the restaurant industry, I will guide you step by step. I can give you the tools you need to succeed. In addition, I can offer those of you who have never really had the proper tools, but just kind of figured things out on your own, a few tips and tricks. I can also offer a refresher course in SIMPLY SERVING 101 for those of you who have been doing this for years and just need a boost in your morale by reminding you of what you already know and love about the restaurant industry.
Simply Serving 101 has some great tools for Owners and Managers, as well. I have created training manuals, house procedures, employee manuals, checklists and various other tools. You won’t have to spend hours in the office, reinventing the wheel. These tools are ready to use now, or I can customize them for your specific brand.
I have been serving and bartending and managing for years. Every few years I make a jump back into serving, because I still love taking care of the guest. I love being able to positively impact someone’s day. So often we go out to eat and the service is mediocre at best. My mission is to bring back hospitality. It’s not enough to claim you deliver hospitality, you have to really show it, with every guest that walks in the door. Through good hiring practices, proper training and the right guidance, you can absolutely deliver true hospitality in any environment.
